Due to popular demand, here is the super simple Burnt Broccoli + Chickpea Lemon Pasta dinner recipe I recently made for dinner in my new home!
First off, I can’t possibly take full credit for this dish. The inspiration for this dinner recipe came from the blog, Making Thyme for Health. I added a few little tweaks such as changing to burnt broccoli because who doesn’t love burnt broccoli?? Ever since I was gifted an air fryer as a housewarming gift, I want to make “burnt” everything. 🤣
So without further adieu, here is my version of Burnt Broccoli + Chickpea Lemon Pasta!
Ingredients
- 4 cups chopped broccoli florets
- 1 15-ounce can chickpeas, drained and rinsed
- 3 tablespoons extra virgin olive oil
- 3 garlic cloves, minced
- 1 lemon, or two if you prefer extra lemon flavor
- 8 ounces pasta
- 1/2 cup parmesan cheese
- Garlic powder, to taste
- Salt + Pepper, to taste
Directions
- Line air fryer tray with foil. Pat dry the rinsed chickpeas with a paper towel then transfer them and the broccoli to the tray. Toss with 1 tablespoon of olive oil. Add garlic powder, salt + pepper to taste. Air fry on 400 degrees for 15-20 minutes, or until broccoli is crispy and “burnt” on the edges. Meanwhile, cook the pasta according to package directions.
- In a large skillet, warm the remaining olive oil over medium-low heat. Add the garlic and sauté until slightly golden + fragrant, then reduce heat to low.
- Drain the pasta. Add to the skillet with the oil and garlic. Add the roasted broccoli and chickpeas. Squeeze in the juice and zest of 1 lemon. Add parmesan cheese and mix until melted. Sprinkle with salt, pepper + garlic powder (to taste) and toss to combine.
- Serve warm and enjoy!
